What is cycling?
All fish and invertebrates excrete ammonia as a waste product. This is extremely toxic. There is a group of beneficial bacteria that convert ammonia into nitrites, and a second group of bacteria that convert nitrites into nitrates, which is not nearly as toxic. A new tank does not have these bacteria.

'Cycling' is the process of introducing and establishing these essential bacteria
